Mud House Swan Reserve wines are their flagship range of super premium wines. The winemakers select only the highest quality parcels from Mud House's Marlborough vineyards to create these elegant wines. Colour: Straw yellow. Nose: Intense, complex aromas of melon, mandarin, peach and mango combined with wet stone, mineral and subtle oak notes of cashew. Palate: Flavours of lemon, grapefruit, mandarin and stonefruit supported by undertones of subtle yeast autolysis characters and fine acidity. The palate is elegant with a flesh-like texture and a lingering seductive finish. Food Matching: Grilled chicken breast with mango salsa. A model growing season with warm, consistent weather throughout the whole season, allowed the grapes to ripen without any of the usual pressure from seasonal influences. Marlborough enjoys the longest ripening period of anywhere in the world. A balanced pruning, shoot trimming, tucking, and thinning regime ensures a partially shaded canopy is maintained, enabling the full flavours of the grapes to mature. Each parcel of fruit was carefully monitored during ripening so it could be harvested as optimum maturity. The fruit parcels were then transported with haste for immediate pressing with minimal skin contact to avoid juice deterioration. After settling, each batch was cool fermented in stainless steel using a variety of cultured yeasts to add complexity to the blend and to retain the fresh fruit characteristics from each of the vineyards. The wines were blended shortly after the completion of fermentation and then carefully balanced and prepared for bottling.

Vibrant and racy fruit, bready yeast flavours and zesty appley freshness is accompanied by the waxed-lemon flavours of Chenin Blanc - a variety so clearly suited for sparkling production due to its fine acidity. The fifth Chardonnay adds fruitiness and depth. The Crémant de Loire Appellation is among the most demanding sparkling wine appellations in France (far more stringent than, for example Saumur or Vouvray Brut, for the former of which the Langlois wines would naturally qualify). Under the auspices of Bollinger, Langlois has further augmented the regulations to equal, and even exceed, those of Champagne: A majority of chalky soils, very favourable to elegant wines. Hand picking in small baskets in order to collect only the best grapes. 150 kg of grapes for 100 litres of must. A minimum maturing of 12 months in bottle. Selection of the grapes on the best terroirs of the area of Saumur. Total control of the pressing on our pneumatic press. Fermentation in small vats, allowing precise control. This is an art in which the House of Veuve Clicquot excels. Our Brut Yellow Label reflects the superb vineyards we own and the consistent nature of our House style. The predominance of Pinot Noir provides the structure that is so typically Clicquot, while a touch of Pinot Meunier rounds out the blend. Chardonnay adds the elegance and finesse essential in a perfectly balanced wine. Grapes from as many as 50 to 60 different Crus go to the blending of Yellow Label. Traditionally, the proportion of each grape variety used is : 50 to 55% Pinot Noir - 15 to 20% Pinot Meunier - 28 to 33% Chardonnay. These figures vary slightly from year to year according to conditions. The Chef de Caves has to achieve the total consistency of taste, which makes Yellow Label so immediately recognisable, so utterly reliable both in terms of quality, colour and bouquet. He will draw on priceless Reserve wines for the blend: from 25 to 35%, sometimes as much as 40% to ensure the continuity of the House style. Each of these older wines - perhaps 9 years old - is kept separately to preserve the unique qualities of the vineyard and the vintage. First, Yellow Label looks beautiful: golden-yellow, with a foaming necklace of tiny bubbles. Next it is so pleasing to the nose: initially reminiscent of white fruits and raisins, then of vanilla and later of brioche. Note the fine balance between the fruity aromas coming from the grape varieties and the toasty aromas following the ageing in the bottle. The first sip delivers all the freshness and forcefulness so typical of Yellow Label with a symphony of fruit tastes following on. Here is a true member of the powerful Brut family, well structured, admirably vinous. The lingering aromas echo and re-echo, with each fruit or spice note distinct. Veuve Clicquot Yellow Label manages to reconcile two opposing factors - forcefulness and finesse - and to hold them in perfect balance. This consistent power to please makes it ideal as an aperitif, and perfect as the Champagne to enjoy with a meal.
