Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this - its benchmark wine. The denomination Special Cuvée was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine 'non vintage'. The suggestion of naming it 'Special Cuvée' was immediately approved by Monsieur Bollinger. A blend par excellence, the Special Cuvée is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged. Madame Bollinger - 'I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. Otherwise I never touch it - unless I'm thirsty.' 'Cool, delicate briochey nose. A Rum of supreme quality. El Dorado 21 year old is an exquisite rum. In this blend of select aged rums, each of the constituent rums is at least 21 years old. Some are much older and can be as old as 25 years. To achieve the superb colour, smooth taste and full fragrant aroma, the rums are matured in 45 gallon oak casks in an ideal natural climate for ageing - within six degrees of the equator on the tropical north coast of South America, blended to perfection by master blenders. This rum is described as having an inviting, rich yet caramel hue. A nose with a degree of complexity allowing one to appreciate the subtle confectioned nuances to linger. The first taste is warm yet silky with a full bodied rich mouth feel. The warmth of alcohol is supported by fine, smooth yet integrated oak allowing the tropical flavours to permeate and take you to a long pleasurable finish. This is designed for the connoisseur of rums who has the time to indulge and appreciate the wonders of this creation. This drink is best savoured on its own. 21 years in the making it deserves time and indulgence. This glorious, full bodied rum of exquisite taste and character is specially and carefully packaged in a gift box and in a bottle inspired by the flasks used by the sugar planters many centuries ago on the banks of the Demerara river, ABV 43%. A darker, full bodied, smooth whiskey in the traditional Irish sense. The Millars Special Reserve Irish Whiskey brand originates from a company in Dublin called Adam Millar & Company. The brand was first established in 1843 as a premium Irish Whiskey and was successfully marketed until the 1970's. Millars Special Reserve was known throughout Ireland as a classic Dublin sipping whiskey. The traditional method of drinking such a whiskey was to sip it neat and occasionally drink a bottle of Guinness Stout as well. In 1987, Cooley Distillery, the only independent Irish owned distillery in Ireland acquired the rights to the A. A. Millar brands. However, it wasn't until September 1994 that Cooley formally relaunched Millars Special Reserve Irish Whiskey. The brand reflects the classic atmosphere of the 1920's and 1930's, a time when writers like Joyce, O'Casey and Yates raised the Irish spirit and in so doing contributed to the birth of the Irish nation. This is a unique blend of the finest grain and malt Irish whiskeys with exceptional character and superior quality. It is double distilled and matured almost entirely in once used oak bourbon casks. The character of the whiskey comes primarily from the quality malt barley specially chosen to give the whiskey a unique smooth after taste. Millars Special Reserve has been distilled, matured and blended to produce a darker, full bodied, smooth whiskey in the traditional Irish sense. It has been awarded two bronze medals, one at the International Spirits Challenge (May 1996) and the other at the International Wine and Spirits Competition (July 1996). Nose: Sweet grape on the nose joining forces with the grain to offer a lush sweetness alongside the harder, oakier grains. Taste: Very malty start followed by a very powerful grain which is fruity. Not a light whiskey at all. Full mouth feel, slight grapeness with good weight sherry in evidence. Finish: Very favourable bourbon finish feel of a five year old minimum with seven plus. Serving Suggestions: Neat, on the rocks, or with water to taste. Equally good served with mixers or as an ingredient for Irish Coffee. A sipping whiskey for all occasions.
