Deep, dark intense ruby colour. Red plum and black cherry fruit with a hint of cinnamon. Rich and muscular with mineral, black berry fruit and dark chocolate on the finish. Harmoniously composed of sufficient of each of the five main Bordeaux varieties to ensure none dominates. This wine shows a consistent, linear flavour profile. Each variety was harvested separately from specially chosen vineyards in the Stellenbosch area. The resultant cuvee is called De Compostella ('The Compilation of Stars') and the aim was to make each of the five components able to stand as varietal wines. The wines were tasted blind after one year in the barrel and the blend was then constructed in descending percentages, from the wine which rated highest to that in 5th place. Each variety spent twelve months in barrel as a single varietal before the wine was blended together. Thereafter the blended wine was matured for another twelve months giving a total of twenty-four months in barrel, a third of which was new French Oak, a further third in 2nd fill and a final third in 3rd fill French Oak barrels. De Compostella 2007 was bottled in April 2009 and should start showing well for drinking from 2012. This is a wine that can mature over ten years if stored correctly. Fourth great vintage in a row, for the first time this century in Alsace ! The weather was uneven all year, but flowering passed without incident, followed by a heatwave from early August until 15th September. The harvest began early, on 24th September, giving very good results for our bought-in grapes. Grapes from our own Estate were picked under ideal conditions, and gave an appreciable quantity of late-picked over-ripe wines. An excellent crop of Gewurztraminer made up for the very small harvest in 1997. Vinification: Our Gewurztraminer VENDANGE TARDIVE and SELECTION DE GRAINS NOBLES wines all come from the historic HUGEL family estates in the heart of the Grand Cru Sporen slope. As for the rest of our production, our grapes are harvested exclusively by hand. The grapes are taken in small tubs to the presses, which are filled by gravity, without any pumping or other mechanical intervention. After pressing, the must is decanted for a few hours, then fermented in temperature-controlled barrels or vats (at 18 to 24C). The wine is racked just once, before natural clarification during the course of the winter. The following spring, the wine is lightly filtered just before bottling, and the bottles are then aged in our cellars until released for sale. Harvest date : 23 & 28. Oct.1998 This wine shows a natural sediment of tartrate crystals Tasting Notes: The anticipation is obvious at first sight. The wine swirls softly and languorously around the glass, a picture of refined elegance in satin and silk, with brilliant gold highlights. The bouquet is unique, a captivatingly perfect, concentrated, deep, harmoniously powerful aroma of oriental spices, orange blossom, marshmallow, honey, currants... Liqueur-like, luscious, perfectly opulent, rich and ripe, it is elegantly balanced and suave. An SGN that all fans of late-harvest wines should have in their cellars. Serve it at 6C, or cellar it for 15 to 20 years just for the pleasure of enjoying an intense emotional experience, with terrine of foie gras, pan-fried foie gras with quince, with fruit tarts, with Roquefort or with Stilton.

'This allows us to elevate the quality and status of our premium red wines, reserving the very best parcels of vineyard for the Marlbrook and Klein Constantia Cabernet Sauvignon ranges,' explains Adam (Klein Constantia's winemaker (since the 2004 vintage) is 29-year-old Adam Mason). Healthy, deep garnet colour. On the nose is initial spicy - wood scents give way to ripe plummy, Christmas pud' aromas, and hints of cool grown Cabernet. The palate is well structured, but medium bodied. Mouth watering flavours of ripe, juicy red currants and fleshy plums. Wonderful array of classic, cooler Cabernet attributes complimented by velvety Merlot flavours. Judicious oaking has lent an added dimension of savoury flavours to this balanced, moreish morsel. With the correct storage, this wine will continue to mature and evolve for a further 8-10 years.
